We leave one week from today for our 3 months in Spain!! 🤯🤯 We have a lot to do before then but we are starting to get very excited!! This will be the first time since going Carnivore we've been out of our comfort zone (and without a grill) for so long. First stop when we arrive is to find an air fryer, I think that will be key in making meals quick/easy (and familiar). But we are so excited to eat all the delicious meats that Madrid has to offer.
We have a couple times where there is a holiday and I'll be off work so we will be able to check out some other countries. If you could go anywhere in Europe (besides Spain and Portugal) where would you go?

Nathaniel has perfected what he calls "Medium Rare" Pepperoni chips. For a more crispy texture leave them in for one minute..but he thinks 55 seconds is the perfect chewy/crunchy texture.
Well total miscommunication with the pig for lunch today. 😂 We thought we ordered the whole pig but maybe because we ordered so much other food or because there was only 3 of us they brought us one PORTION of pig and not the whole one. It was probably all the food we needed because we also had blood sausage, fried bacon, octopus, and a bunch of cheeses...but I was bummed I didn't get a picture with one. 😂😂 I took this before from someone else's table thinking ours was on the way still. They cut the pig with a plate to show you how tender it is. The skin was absolutely incredible. They only season it with salt and then pour over some of the broth it's cooked in on your plate. Such an incredible meal.
Today I am grateful for the rain! ☔ 🌧️ I definitely took it for granted when I lived in Midwest, but living in Arizona everybody just gets so excited here whenever it rains. I was volunteering in the second grade class in church yesterday and all the kids were just sitting by the open door smelling the rain and begging to go play in it. I remember so many times being really annoyed because of the rain living in Chicago or Indiana, today was a fun reminder how important it is and the life it provides.
Okay now let's set some goals for the week ahead. Coming from someone who follows politics VERY closely, I will say I am glad we keep politics out of this group. It can be so divisive and more often than not adds just adds unnecessary stress to our lives...and in this crazy world it's nice to have a place where non of that matters.

So this week my goal is to get my average carbs down to under 10g. per day, protein to stay between 90-126 grams per day and my fat up to 200 grams minimum per day. My calorie average is low for last week. So my goal is to do better with these things.
