Good Evening Y'all!! Still doing good with no dairy except butter and no eggs. This is day 22.
Today was the first day it's been a hard to pass on cheese and eggs, but I did it.
I think the reason it was such a hard day is I have had issues since Monday with the boot I'm supposed to be wearing on right foot. The boot I was given Monday was extremely to large and wasn't what the doctor ordered. So Tuesday I had to go back and get another boot. So I got another boot which was shorter but still way to big. So last night I was talking to my cousin and she told the boot was supposed to be snug around my foot when it's working properly. I told her well this isn't snug my foot moves up and down in it. She said that's not right. She said can you not tighten it up. I said I've tried but it's not doing nothing. She had me take it off and she inspected it. She found a defect in one of the seams on the area chamber. So today I had to go to the big city of Little Rock to get a proper brace. Praise God I finally got a proper fighting boot for my right foot. I think they all struggled so much with this boot because I wear a size 10 shoe, have a narrow foot and I'm short. They can't wrap their head around a short person having such a long foot.
I'm pretty happy I made it through today without caving.
Here's my stats for today. BLESSINGS!!
I don't typically love cooking with cast iron, despite the excellent results they can bring. It's messy and smells up the house. Add to that, the one we have is super old and not very good. We were recently gifted a really good one from Lancaster Cast Iron so today I decided to give it a try. We have a side burner on our Weber so I could do it outside. I sous vide a steak, then seared it in tallow on the new pan. Man it was incredible. What a difference it made from our old one. Super easy clean up too. Below is the pan, of course I forgot to take a picture of the steak haha.
Do you love using cast iron? What are some favorites you make in them?
Yesterday we surprised the kids and brought home a puppy!! They have been begging for one for years and we felt like the time was right to bring one home.
Meet Angus 🐕 He's a Golden Retriever/King Charles Cavalier Spaniel mix. He's 11 weeks old and currently weighs about 8 pounds, he should be around 35 pounds fully grown. I know it will be an adjustment for a while as he gets potty trained etc but we are so excited. 😂 Wish us luck! 🤪
Cheese is good! I ate a block of chipotle oven baked cheese with lunch yesterday and it was divine. I love it, but know that it halts any progress I'm making, and will even trigger eating in excess to where I'll gain weight. It's sad but I have accepted it. If I eat it in small quantities with a meal, it's ok, but I really have to work to keep it in check.
What's your favorite cheese? How do you incorporate it? Do you see negative results when eating it?

Ground beef. I'm not the biggest fan because it usually makes me want all the vessels you would typically deliver it with; a bun, a tortilla, etc. Yesterday it was an all ground beef day for me and the kids. Burger patties for lunch and taco meat bowls for dinner. I quite enjoyed it. It's cheap too.
I need ideas. What's your favorite way to do ground beef?
Beautiful Sunrise this morning! I did it! I fasted for my 3 busy days. Now that I am sitting on the couch I am thankful it is 8pm(est) because I am snackish all of a sudden. I have chuck roast out to put in the crockpot in the morning. I am really debating about waiting to break my fast until after work. I have Soo much energy. Tomorrow we go down to Columbus for State Cross country and I am excited to have some one on one time with this guy as well as eating out. Btw I am pretty sure he grew but the wall measurement didn't show much so maybe it's the hair.
