Happy Independence Day Eve everyone!
I've been busy canning that 2024 beef. From the 3 chuck roasts I got 6 pints of well-trimmed cubes. I have 2 that did not seal so reprocessed them today with the ground beef. I had 6lbs which equaled 7 pints of cooked meat.
My last canner is depressurizing now. It's an electric canner so it only holds 4 pints at a time, which makes the whole process take a while but it's less hands-on than using my canner on the stovetop.

Accountability
Fresh air/sunshine/exercise/sleep
Yes (errands, neighbor, cutting flowers), not much-cloudy, yes-everything all day, pretty good until 3 a.m.

Food
M1: Protein shake coffee
M2: Laura's chicken salad with a beef stick, avo-kraut salad
M3: AF chicken wings with a feta/mayo/sourcream dip, olives
Snack: Greek yogurt & blueberries

Big Day!

Yesterday we surprised the kids and brought home a puppy!! They have been begging for one for years and we felt like the time was right to bring one home.

Meet Angus 🐕 He's a Golden Retriever/King Charles Cavalier Spaniel mix. He's 11 weeks old and currently weighs about 8 pounds, he should be around 35 pounds fully grown. I know it will be an adjustment for a while as he gets potty trained etc but we are so excited. 😂 Wish us luck! 🤪

Wednesday, September 3rd

Cheese is good! I ate a block of chipotle oven baked cheese with lunch yesterday and it was divine. I love it, but know that it halts any progress I'm making, and will even trigger eating in excess to where I'll gain weight. It's sad but I have accepted it. If I eat it in small quantities with a meal, it's ok, but I really have to work to keep it in check.

What's your favorite cheese? How do you incorporate it? Do you see negative results when eating it?

Sunday, Aug 31st

Happy Sunday! Sharing a video today from our week, one of the highlights. This was Wednesday evening church, normally they have a more casual prayer meeting where someone plays the guitar, but they were doing some construction in the fellowship hall so they had their prayer meeting in the sanctuary. No one was there to play the piano so my my Grandma did it, she's been playing the piano in church for probably 80 years.

For context, she's 88, she had a really bad fall 5 years ago now and hit her head and ended up with a lot setbacks, similar to having a stroke. She has a lot of dementia like symptoms also (I am sure related to her Type 2 diabetes), she really can't read music anymore, and she has trouble seeing well, and she needs to wear hearing aids to hear but hates wearing them, so on this night she didn't want to wear them. My 93 (almost 94) year old grandpa takes care of both of them on their farm. Anyway, on this night she sat down on the piano and led worship as people called ...

Friday July 3rd!!

Apologies to all of our Canadian friends because I didn't wish you a happy Canada Day yesterday. 🇨🇦 I hope you were able to enjoy a day off and eat some good meat!!

Most of us are in the US are celebrating the 4th of July this weekend, and it just so happens to be America's 250th anniversary so it should be a big celebration!! 🇺🇸🦅🎇

Due to logistics with the puppy and my job etc. We split up as a family this weekend. Chris and Nathaniel went up to the cabin to enjoy the 4th of July parade and some of the small town festivities, while Penelope and I stayed home to be with the puppy and so I could get ahead on some work and filming.

My job is giving us Friday off for the 4th of July and then Monday off also for a "Global Wellness Day". They always just give everybody in the company an extra day off over 4th of July weekend to give everybody a longer holiday.

What are your plans for this weekend?

Accountability post: I haven't reached full carnivore yet. I'm more keto. I had lots of dairy carbs today. That's why my carbs are so high. I did reach my protein goal today and that's what I'm trying to concentrate on. But I got to cut the dairy carbs. I'm happy with todays totals. I also did some food prepping today which is out of the ordinary for me. I made some of @Lauraespath pizza meatballs. I got 42 meatballs that weighed 3.5 ounces each.

Accountability for Friday, July 3rd:

Lunch: scrambled eggs and two hot dogs.

Supper: a bunch of meat balls

Tonight as people were walking to the park to watch the fireworks 🎇, Jeff and I went for a walk. As I am writing this I am inside (no mosquitoes!) looking out our patio door watching someone not too far from us every year blows off fireworks. It better than going to the park and having to deal with the traffic afterwards.

Oh .....I also went to Pick N Save/Kroger and pick up 5 family packs of ribeyes for $9.99
