In case you are not on Instagram or you missed it, here is the kids first and last day of school pictures. And of course including their amazing teacher @ChrisSpath
Last year Nathaniel had the biggest growth spurt but this year it definitely was Penelope with the biggest change. She's looking very grown up 😭
I don't typically love cooking with cast iron, despite the excellent results they can bring. It's messy and smells up the house. Add to that, the one we have is super old and not very good. We were recently gifted a really good one from Lancaster Cast Iron so today I decided to give it a try. We have a side burner on our Weber so I could do it outside. I sous vide a steak, then seared it in tallow on the new pan. Man it was incredible. What a difference it made from our old one. Super easy clean up too. Below is the pan, of course I forgot to take a picture of the steak haha.
Do you love using cast iron? What are some favorites you make in them?
Yesterday we surprised the kids and brought home a puppy!! They have been begging for one for years and we felt like the time was right to bring one home.
Meet Angus 🐕 He's a Golden Retriever/King Charles Cavalier Spaniel mix. He's 11 weeks old and currently weighs about 8 pounds, he should be around 35 pounds fully grown. I know it will be an adjustment for a while as he gets potty trained etc but we are so excited. 😂 Wish us luck! 🤪
Cheese is good! I ate a block of chipotle oven baked cheese with lunch yesterday and it was divine. I love it, but know that it halts any progress I'm making, and will even trigger eating in excess to where I'll gain weight. It's sad but I have accepted it. If I eat it in small quantities with a meal, it's ok, but I really have to work to keep it in check.
What's your favorite cheese? How do you incorporate it? Do you see negative results when eating it?
With this Healing Humanity documentary and all the talk around it, seeing myself on the screen again, and the positive feedback, it's been really surreal. Sometimes we lose sight of the impact our stories can have. It made me reflect on what I went through. No hope to I can beat this. I hope people hear or watch and it motivates them to change. Everyone here has a story, and will have an ultimate success story that can hopefully inspire someone in your lives. It spreads exponentially.
Have you watched the documentary yet? Has your story impacted someone close to you?
Hello!
I spent Sunday at our local park and watched the Sunset. It was pretty awesome. I got some needed quality time with my bestie. Just wanted to check in. Been super busy at work and a lot going on in my personal life. Anyway wanted to share some of the beauty with you all. Have a wonderful week 😊 ❤️
Happy Tuesday! Yesterday was Chris and my 13th wedding anniversary, we forgot until mid-day when someone text us Happy Anniversary. 😂😂🤦🏼♀️ We don't do presents or do much to celebrate. The last couple of years we've been blessed to take a trip around our anniversary, this year we are going to take the kids on vacation with us but not for another couple weeks. I am very blessed in this journey to have Chris by my side. ❤️❤️❤️
Hope you have a great day!!
