This week my husband was in the ICU after experiencing diabetic ketoacidosis, sepsis, AKI, and colitis. Just days before falling ill he promised his doctor he would change his lifestyle if he would give him three months.
It was scary and I think he does not realize how close he was to death or permanent kidney damage.
He was released from the hospital Thursday night and I stocked the freezer and refrigerator with meat and have a Good Ranchers box on the way soon. He was able to cut the insulin in half already because he is not eating carbs. His doctor was shocked when he saw him on Friday. He seemed confused but conceded the only reason to take an additional short acting insulin is if you eat carbs.
I found the video Laura shared about Chris reversing his T2 but he has not watched it yet.
I hope he does. I really want us both to make lifestyle changes.
I was so frustrated by the hospital meals and the discharge instructions to resume the previous diet. What??!!
Here’s to healing. I just want to convince him salads are probably not the answer.
I welcome resources if anyone has specific recommendations to share.
Cheese is good! I ate a block of chipotle oven baked cheese with lunch yesterday and it was divine. I love it, but know that it halts any progress I'm making, and will even trigger eating in excess to where I'll gain weight. It's sad but I have accepted it. If I eat it in small quantities with a meal, it's ok, but I really have to work to keep it in check.
What's your favorite cheese? How do you incorporate it? Do you see negative results when eating it?
Happy Sunday! Sharing a video today from our week, one of the highlights. This was Wednesday evening church, normally they have a more casual prayer meeting where someone plays the guitar, but they were doing some construction in the fellowship hall so they had their prayer meeting in the sanctuary. No one was there to play the piano so my my Grandma did it, she's been playing the piano in church for probably 80 years.
For context, she's 88, she had a really bad fall 5 years ago now and hit her head and ended up with a lot setbacks, similar to having a stroke. She has a lot of dementia like symptoms also (I am sure related to her Type 2 diabetes), she really can't read music anymore, and she has trouble seeing well, and she needs to wear hearing aids to hear but hates wearing them, so on this night she didn't want to wear them. Happy Saturday! I hope you are all doing well. I know some people in the group have had some recent tough news for themselves or family members. It really puts the day to day issues we face into perspective, and reminds me to just focus on doing the best I can to be as healthy as possible. To those who are having a hard time, we are all here for you and sending you some prayers and support. 🙏🏼🙏🏼 Just focus today on doing the best you can and remember that food isn't going to bring you the comfort you are looking for.

Happy Saturday!! We are officially back, well almost 😂😂 our flight is probably landing shortly. We took the overnight flight last night from Maui to Phoenix. I swore I would never do that overnight flight again with kids but it's just too nice to get an entire extra day of vacation before you fly home. Plus Nathaniel has his last baseball game today we wanted to make it back for (praying we all slept on the flight). Sharing some pictures of our trip below, we had an amazing time! ☀️🏖️🌊🐳🐢

Made a chuck steak tonight. Good flavor, very fatty, and some parts are chewy. My new Meater meat thermometer lost the WiFi connection in the middle of cooking so that messed me up a little. Some parts are a little too rare and some edges are chewy. Overall pretty good though.

3rd: Slept in (anything past 4 a.m. is sleeping in for me now.) We had a long lovely coffee, morning devotions time. Then I cleaned my bathroom and did laundry.
A friend called and we talked for a good long time. Then DS2 called and he and the boys came out.
Farmer, DS & GS1 went out to clean up a fence line while GS2 and i made cookies for them to take home.
After they left, it was more laundry.
Both Farmer and I have the sinus crud AGAIN! This is getting terribly old. Stupid chemtrails.
It's getting to be bedtime so some accountability.
