Happy Wednesday! Things are still going well here in Madrid. Thankfully I have been sleeping great and getting lots of walks in. Tonight is dinner at our family's favorite restaurant here, I got a reservation back in July, before I even booked my flight for this trip. It's a Uruguayan restaurant that serves amazing steaks and they have friend cheese as an appetizer. They even bring you a cup of warm beef broth to start your meal. It's the perfect carnivore restaurant. The weather here has been perfect which makes long walks even better. I have a couple more days here and travel home Friday.

How is your week going? Is it feeling like fall where you live? Have you been able to be outside this week getting some fresh air?

Wednesday, September 3rd

Cheese is good! I ate a block of chipotle oven baked cheese with lunch yesterday and it was divine. I love it, but know that it halts any progress I'm making, and will even trigger eating in excess to where I'll gain weight. It's sad but I have accepted it. If I eat it in small quantities with a meal, it's ok, but I really have to work to keep it in check.

What's your favorite cheese? How do you incorporate it? Do you see negative results when eating it?

Sunday, Aug 31st

Happy Sunday! Sharing a video today from our week, one of the highlights. This was Wednesday evening church, normally they have a more casual prayer meeting where someone plays the guitar, but they were doing some construction in the fellowship hall so they had their prayer meeting in the sanctuary. No one was there to play the piano so my my Grandma did it, she's been playing the piano in church for probably 80 years.

For context, she's 88, she had a really bad fall 5 years ago now and hit her head and ended up with a lot setbacks, similar to having a stroke. She has a lot of dementia like symptoms also (I am sure related to her Type 2 diabetes), she really can't read music anymore, and she has trouble seeing well, and she needs to wear hearing aids to hear but hates wearing them, so on this night she didn't want to wear them. My 93 (almost 94) year old grandpa takes care of both of them on their farm. Anyway, on this night she sat down on the piano and led worship as people called ...

Happy Saturday! I hope you are all doing well. I know some people in the group have had some recent tough news for themselves or family members. It really puts the day to day issues we face into perspective, and reminds me to just focus on doing the best I can to be as healthy as possible. To those who are having a hard time, we are all here for you and sending you some prayers and support. 🙏🏼🙏🏼 Just focus today on doing the best you can and remember that food isn't going to bring you the comfort you are looking for.

Good Evening Y'all!! I'm getting ready for bed so I thought I would do my accountability post for today. I'm pleased. I didn't take a picture of lunch. My husband and I shared the pork belly. I ate only half of what's on the plate. Have a Great night y'all. Blessings!!

Tuesday, October 7th

Laura is in Spain and the kids are doing a fall break camp at a climbing center nearby. This means I'm on my own for meals all week. The plan is to have some fun with different stuff I don't usually get to have. Yesterday I did a tri tip in the sous vide. That cit only needs a couple hours so after lunch I put a chuck roast in. That will cook for almost 24 hours. It will be the first time I've tried to do a long cook on a tough piece of meat and see if it's tender. I'll keep you posted. What's some unusual things you like to make? Different methods? Have you tried sous vide?

Good evening! I haven’t been tracking this week but my days have consisted of coffee, scrambled eggs and chicken links, Laura’s chicken salad and pork rinds for lunch (soo yummy)! And cheeseburger meatballs and chicken wings for dinner. Got X-rays done on my hip and leg today. MRI next week. Praying it’s not a tear and needing physical therapy but I am in quite a bit of pain. I’m alternating ice and heat and stretching. Trying not to take too much Aleve. We are expecting a ton of rain again in Phoenix the next few days and over the weekend. Not sure when Laura comes home but hope she is safe 🫶🏻
