We are SWEATING here in Madrid, our AC is still broken and it is in the 90s here this week. They offered to give us our money back so we could move but that is a whole other complicated process (where would we go?) so we are trying to just hang in there for a couple days to see if they can fix it soon. Thankfully we are leaving Madrid this weekend so I'm hoping they can find a way to get it resolved by next week.
I am grateful for AC at work today and Chris and the kids are going to spend lots of time out of the house today.
How are things looking where you live? Are you finding ways to stay cool?
For me one of the challenging things about being hot in the summer is that meat just doesn't sound as good. I want something cold and light for a summer meal and often something heavy/hot doesn't sound as good. I eat a lot more chicken salad in the summer, cold bacon, I take cold leftover skirt steak and chop it up and sprinkle feta cheese on top and it makes me feel like I'm having a "salad". Even taco bowls are sound better to me in the summer.
What is your go-to summer meal when it's too hot to cook?
Cheese is good! I ate a block of chipotle oven baked cheese with lunch yesterday and it was divine. I love it, but know that it halts any progress I'm making, and will even trigger eating in excess to where I'll gain weight. It's sad but I have accepted it. If I eat it in small quantities with a meal, it's ok, but I really have to work to keep it in check.
What's your favorite cheese? How do you incorporate it? Do you see negative results when eating it?
Happy Sunday! Sharing a video today from our week, one of the highlights. This was Wednesday evening church, normally they have a more casual prayer meeting where someone plays the guitar, but they were doing some construction in the fellowship hall so they had their prayer meeting in the sanctuary. No one was there to play the piano so my my Grandma did it, she's been playing the piano in church for probably 80 years.
For context, she's 88, she had a really bad fall 5 years ago now and hit her head and ended up with a lot setbacks, similar to having a stroke. She has a lot of dementia like symptoms also (I am sure related to her Type 2 diabetes), she really can't read music anymore, and she has trouble seeing well, and she needs to wear hearing aids to hear but hates wearing them, so on this night she didn't want to wear them. Happy Saturday! I hope you are all doing well. I know some people in the group have had some recent tough news for themselves or family members. It really puts the day to day issues we face into perspective, and reminds me to just focus on doing the best I can to be as healthy as possible. Long time follower, first time poster. I have bounced back and forth between keto and falling off of keto for many years. More than I care to think about. About 20 years ago I lost about 60 lbs on the atkins diet, but it also fed my disordered eating being focused on that low number of carbs. Gained that back plus some. Fast forward to today, currently dealing with some minor health issues, (high blood pressure, pre-diabetes, gerd, hypothyroid, overweight, menopausal...) I rebuilt up my resolve to start again Jan. 1st. Hit a few bumps, but I started again 1-11 with adding in any extra support I can get, like joining here. It's actually going pretty well. Lost 5 pounds already. Need to fine tune some things still, like eating more protein early in the day. And getting in enough water and electrolytes. I had to get a new crockpot since I kinda dropped the lid on mine and somehow I had it sitting to close to the stovetop while something was cooking and so I also melted the knob that turns it on.
Anyway, new one is here and it’s stainless inside! It also has a delay feature so I prepped some frozen chuck roast with onion and garam masala. That will be dinner tomorrow.
